Production Manager 

Nozawa Onsen Distillery is looking for a hands-on Production Manager to oversee daily gin and whisky production. The role covers production planning, quality control, compliance and record keeping, inventory management, and supervising the production team. This position requires both technical skill and practical on-the-floor work, with strong communication, accuracy, and a focus on maintaining efficient, safe, and high-quality output. Experience in beverage or food production and the ability to keep workflows on schedule are essential..

Recruiting position: Full-time employee

Key Responsibilities:

• Plan and coordinate daily production from mashing and fermentation through distillation and bottling
• Maintain accurate production logs, batch traceability, and compliance/excise reporting
• Monitor stock levels of raw materials and packaging; place timely orders
• Maintain HACCP, hygiene, equipment safety, and regulatory documentation
• Support quality checks, sampling, and sensory evaluation with the Head Distiller
• Supervise production and seasonal staff to ensure safe, efficient workflows
• Assist with budgeting, cost tracking, and reporting
• Communicate production timelines and updates across teams

Application requirements
・2–3+ years in distillery, brewery, or food/beverage production
• Strong organizational and problem-solving skills; comfortable multitasking under pressure
• Clear and proactive communicator; team-oriented
• Physically able to handle manual production tasks (lifting, standing, climbing)
• Detail-focused, quality-driven, and motivated to improve processes and products

  • Customer service and drink provision in the tasting room

Distiller - Junior Distiller

Nozawa Onsen Distillery is looking for a Junior Distiller to support the production of spirits and whiskey. You will be responsible for assisting the distillation and production process under the Lead Distiller. As a member of the production team, you will provide a wide range of support to on-site operations to ensure smooth and safe production. This job requires a good balance of technical skills and physical strength .
We welcome those who are interested in whiskey and spirits production and want to be involved in on-site manufacturing.

  • Assistance with spirits and whiskey manufacturing operations
  • Raw materials required for production (Selection and procurement of malt, yeast, botanicals, etc.)
